DR AKSHAY BABOO

Wine has taken Akshay across countries, languages, cellars, classrooms, vineyards, research projects and many harvests.
That breadth informs OWC’s approach: understand the question, bring the right evidence to it and turn the answer into something a producer can use.
His work combines international winemaking experience with advanced training in viticulture and oenology, alongside a continuing interest in applied wine research.

Experience at Dom Pérignon and Château d’Yquem, bringing a detailed understanding of premium wine production and technical judgement.
Winemaking & operational leadership
Experience in Indian wine production and leadership, connecting wine quality with the realities of scale, teams and operations.
Education & applied research
Wine education and programme leadership at Plumpton College, alongside research that connects scientific questions with production.
Estate direction & consultancy
Director of Winemaking at Gatcombe Estate, and the winemaker named in Jancis Robinson’s 17/20 review of its 2025 Pinot Noir. Consultancy also includes sparkling winemaking and new planting at Blake’s Lane Vineyard, Surrey, and technical winemaking support at Setley Ridge.
